How does after-hours restaurant knife handoff work?

For a confirmed Sharp After Dark account in an agreed area and schedule, MKG picks up knives after the last ticket and returns them before prep the next day. The plan is built around the kitchen's actual hours, not a fixed clock window.

What if service ends late?

Tell Sean when the last ticket is expected and who can hand off the knives. That may be 9 PM or midnight. MKG confirms the pickup time against your location, route, and the schedule agreed for the account.

What if prep starts early?

Share the next day's prep start and return contact. Whether prep starts at 8 AM or noon, the agreed return is scheduled before prep. If the route or workload cannot support that schedule, Sean will discuss the available terms before confirming service.

Which knives should be included?

Count chef and prep knives, specialty blades, and dining-room steak knives. Mention chips, broken tips, serrations, and any knives that must stay on the line. A recurring program can include condition notes and fleet tracking.

How do I request the program?

Send the restaurant name and location, approximate knife count, last-ticket time, next-prep time, preferred service days, and handoff contacts. One-time restaurant resets start at $150; recurring programs typically start at $250 per month, with final pricing based on the fleet, repairs, timing, and route.
