Our Story

The Details Before the Dinner

Because every great experience begins long before the plate reaches the table.

The person behind the edge

Meet Sean Maffit.

Sean is the sharpener behind Miami Knife Guy, based in North Miami Beach. Before building MKG, he spent 16 years at Perfect Edge Cutlery in California, learning under his mentor Mike and working as a lead sharpener and trainer.

That experience brought together two demands: keeping busy professional kitchens supplied with working edges, and giving Japanese knives and geometry-sensitive blades the individual attention they require. His background also includes restaurant service and staff training, so he understands the pressure on both sides of the kitchen door.

Today, Sean brings that experience to South Florida restaurants, private chefs, and home cooks. He reviews the tool, explains the work it needs, and sharpens for the way it will actually be used.

A well-kept knife changes more than the cut.It changes the room.

01 · Our Story

A Standard Set Before Service

MKG exists for the cooks, chefs, restaurants, hospitality teams, and serious home kitchens that understand the details are not separate from the experience. They are the experience taking shape.

02 · Our Standard

Care, Restraint, and the Right Edge

Every knife is inspected before it is sharpened: steel, profile, bevel, damage, wear, and intended use all matter. The goal is not simply to make a knife sharp. The goal is to restore confidence, preserve the life of the blade, and help the tool feel right again.

03 · Our Method

Inspect. Correct. Sharpen. Finish.

Poorly maintained tools slow the work, dull the mood, and make “good enough” easier to accept. When the tools are right, the standard rises. Prep becomes cleaner. Movement becomes smoother. The kitchen works with more confidence.

Do kitchens that care keep their tools sharp?Or do sharp tools help keep the kitchen caring?

Maybe it does not matter.Either way, the standard is set before the plate reaches the table.
